Ingredients
2 lb. salted cod, prepared and flaked
4 tablespoons olive oil
1 green bell pepper, sliced
1 medium onion, chopped
2 large tomatoes, chopped
2 cilantro leaves, chopped
2 whole bay leaves
2 red bell peppers, sliced
2 garlic cloves, sliced
1 tablespoon tomato paste
¼ cup Manzanilla olives
2 potatoes, peeled, diced and boiled until tender
4 green chili peppers (optional)
4 sprigs cilantro chopped, for garnish
Preparation
In a large frying pan heat the olive oil over medium heat. Add the green peppers, onion, tomatoes, chili peppers and cilantro; cook for 2 minutes. Add the flaked codfish, bay leaves, red bell peppers, garlic, tomato paste, olives and potatoes. Bring to a simmer and cook until the onions are translucent, about 8 minutes. Garnish with cilantro. Serve over rice.
