16 oz. Salt Cod fillets, prepared and flaked into pieces
16 oz. medium black pitted olives, drained
1 red pepper, diced
2-3 garlic cloves, sliced
2 large firm tomatoes, chopped
2 tsp. salt
½ tsp. white pepper
1 tsp. red hot pepper flakes (optional)
¼ cup white wine vinegar
½ cup evoo
Heat oil in a skillet; add garlic cooking only until fragrant then remove from heat. To the warm oil add the vinegar, hot pepper flakes, salt and pepper whisk together. In a large bowl add the Salted Cod, olives tomatoes & red peppers. Pour the warm oil over the fish and mix well. Can be served warm or chilled.
