Creole Calypso Cod


1 lb. salt cod, prepared
6 cups water
3 of each pepper – red, yellow, green & orange, thinly sliced
1 large tomato, thinly sliced
1 large onion, thinly sliced
4 tbsp. flour
1 tbsp. butter
1 can tomato paste
Paprika & Curry
1 sprig each thyme, basil & marjoram, chopped
Olive oil


Put fish into pan with water bring to a boil (about 2 or 3 mins.)

Remove from pan. When cool separate into small pieces and place in a bowl. Sprinkle with flour until lightly coated. Set aside

Place all of the peppers, onion, garlic and fresh herbs into a pan with the cod and butter; cook for 3 mins. Sprinkle with curry powder and paprika. Add tomato paste and one cup of water bring to a simmer and cook for 2 or 3 mins. Serve with rice.
