Cod Fritters


½ lb. salted cod, prepared
4½ cups water
3 cups milk
1½ cups flour
1 tsp. baking powder
2 scallions, finely julienned
1 small sweet red pepper, finely julienned
2 cloves garlic, minced
Oil for frying


Simmer fish in 3 cups of the water and the milk until tender. (about 20 minutes) Remove cooked fish from liquid, shred and set aside to cool. Make a batter with the flour, baking powder and remaining water. Add cod, scallions, peppers and garlic. Deep fry a spoonful of the batter in oil heated to 350°F until golden. Repeat with the remainder of the batter. Serve with Aioli sauce for dipping.
